Happy Monday! Hope everyone isn’t too tired after the Super Bowl yesterday! I honestly was not super into watching the game and then after the power went out pulled out some cookbooks to find recipes for the week. My favorite super bowl commercial went to Doritos again this year.
I didn’t take any pictures yesterday, but we just had our families over and Grant used his Fry Baby and we fried everything – fried chicken, garlic french fries, hush puppies, Grant’s mom made some baked mac n’ cheese, and fried oreos for dessert. Needless to say, my belly was hurting by the end of the night, but it just tasted so good. We have a lot of leftover food though.
I thought I would start sharing my meal plans for the week and also the recipes! This week is kind of weird because I’m still waiting to hear if I’m going to Rochester – yes, I still don’t know if I’m traveling tomorrow. So, this meal plan may or may not get cooked all the way.
Meal Plan – Week of 2/4
Monday – Super Bowl Leftovers
Tuesday – Meatloaf with Mashed Potatoes and Peg Corn
Wednesday – Parmesan Chicken Bake with roasted asparagus
Thursday – Pasta with Whiskey, Wine and Mushrooms and garlic bread
Friday – BUNCO night (Does anyone else play and LOVE Bunco??) – We will both probably eat out separately
Saturday – We’re having friends over for dinner – Roasted Pork Chops topped with sauteed apples and onions with roasted potatoes and some sort of salad (I’ll post this recipe in a separate post because I have to type it up). And Tiramisu for dessert.
Sunday – I’m going to be traveling on Valentine’s Day, so Grant’s going to cook our date dinner. I’ll let you know what it is next week!
